Buffalo Ranch Chicken Sandwich

Ingredients

Southwest Salad Kit ($3.29)

8TBSP plain greek yogurt ($1.00)

4 Brioche Buns ($2.29 for 8)

Green onions ($0.99)

Optional: corn on the cob or sweet potato fries for serving


Total: $1.89 per serving


Staples

Frozen Chicken Breast ($6.99, 17 cents / lb)

Frank's RedHot Sauce

Butter

Spice Blend:

1 tsp salt

1 tsp pepper

1 tsp garlic powder

1 tsp onion powder

2 tsp paprika

½ tsp cayenne pepper

 

Directions

  1. If serving with corn on the cob or fries, get those started according to package directions.

  2. Mix the spice blend in a small bowl.

  3. Halve buns. Toast cut sides up on oven rack (or in a toaster oven) until golden brown, 2-3 minutes.

  4. Heat a drizzle of oil in a large pan over medium heat. Add scallion whites; cook 30 seconds. Stir in Frank’s Seasoning, Frank's Hot Sauce, and 4 TBSP cook, stirring, until butter has melted. Add chicken and cook, stirring, until chicken is warmed through, 2-3 minutes. Season with salt and pepper.

  5. Fill buns with buffalo chicken and a bit of creamy slaw if desired; drizzle with ranch dressing. Divide sandwiches between plates and serve with remaining creamy slaw on the side.
